  • 2 tbsp butter or ghee


For the baby carrots:

  • 12-16 baby carrots, peeled

  • 2 tbsp butter or ghee

  • Salt and pepper to taste


Instructions:


1. Preheat oven to 200°C (400°F).

2. In a small bowl, mix together olive oil, garlic, rosemary, salt, and pepper. Rub the mixture all over the lamb rack, making sure to coat it evenly.
