Cheesecake is a dessert that brings joy to celebrations and gatherings alike. For those following a keto lifestyle, traditional recipes filled with sugar and carbohydrates can present a challenge. Enter the Keto Biscoff Cheesecake. This delightful dessert not only pleases your taste buds but also aligns with your low-carb diet.

Understanding Keto and Its Appeal

The ketogenic diet emphasises low carbohydrate intake and high fat consumption. By cutting down on carbs and replacing them with fats, the body shifts into a metabolic state called ketosis. This means it starts burning fat for energy more efficiently. This diet has gained popularity for its effectiveness in weight loss—research shows that up to 60% of people who follow keto lose significant weight. It can also enhance mental clarity and lower blood sugar levels.

Despite these benefits, many keto desserts fall short in taste and texture. The Keto Biscoff Cheesecake offers a way to enjoy a rich dessert experience while adhering to your dietary goals.

The Inspiration Behind Biscoff

Biscoff cookies are a unique blend of sweetness and spice, originating in Belgium. Known for their caramel and spice flavour, these biscuits are a favourite for pairing with coffee and desserts. The good news for keto fans is that you can replicate that signature taste in a low-carb cheesecake format, breaking away from traditional dessert boundaries.

Ingredients for Keto No-bake Biscoff Cheesecake

For the crust

  • 1/4 cup granulated sweetener (e.g., Swerve or Erythritol)

  • 1/4 cup melted coconut oil

  • 1 teaspoon vanilla extract

  • 2 1/2 cups crushed sugar-free Biscoff cookies (link to recipe here: Biscoff Cookies)

For the cheesecake

  • 16 ounces (450g) cream cheese, softened

  • 1/2 cup granulated sweetener (e.g., Swerve or Erythritol)

  • 1 teaspoon vanilla extract

  • 300ml fresh cream

  • 1 tablespoon gelatin (or 2.5g agar agar for a vegetarian and pescatarian version)

For the Biscoff sauce

  • 1/2 cup heavy cream

  • 2 tablespoons unsalted butter

  • 4 tablespoons Biscoff cookie crumbs

  • 1 tablespoon granulated sweetener (e.g., Swerve or Erythritol)

  • 1/8 teaspoon xanthan gum

For the cheesecake rosettes

  • 1 cup whipped cream cheese mixture (from the cheesecake mixture)

  • 1/4 cup granulated sweetener (e.g., Swerve or Erythritol)

Instructions

1. Prepare the crust: In a medium bowl, mix together granulated sweetener and melted coconut oil. Stir in vanilla extract and crushed Biscoff cookies. Press the mixture into the bottom of a 9-inch springform pan. Refrigerate for 30 minutes.

2. In a large mixing bowl, beat the cream cheese until smooth. Add granulated sweetener, and vanilla extract and gelatin, mix well. Whisk in the cream until thick and creamy.

3. Pour the cheesecake mixture over the prepared crust. Refrigerate for at least 4 hours or overnight.

4. In a small saucepan, heat the heavy cream over medium heat. Remove from heat and stir in unsalted butter, Biscoff cookie crumbs, xanthan gum and granulated sweetener. Let cool to room temperature.

5. In a small bowl, mix together whipped cream cheese mixture and granulated sweetener. Transfer the mixture to a piping bag fitted with a star tip.

6. Pour the cooled Biscoff sauce over the chilled cheesecake. Pipe the cheesecake rosettes around the border of the cheesecake.

Tips for the Perfect Keto Biscoff Cheesecake

  1. Ensure your cream cheese is at room temperature before mixing. This creates a smooth, lump-free cheesecake mixture.

  2. While Biscoff is delicious on its own, consider adding a touch of cinnamon or nutmeg for extra flavor.

  3. For a more intense Biscoff flavour, use more Biscoff cookie crumbs or add a teaspoon of Biscoff cookie butter (you can find the recipe here:) to the cheesecake mixture.

  4. Enhance your cheesecake with a drizzle of sugar-free chocolate or more Biscoff spread on top. A sprinkle of crushed nuts or biscoff cookies can add visual appeal.
